{"id":87,"date":"2018-08-24T21:10:03","date_gmt":"2018-08-24T21:10:03","guid":{"rendered":"http:\/\/blog.pajh.org\/recipes\/?p=87"},"modified":"2018-08-24T21:46:39","modified_gmt":"2018-08-24T21:46:39","slug":"nam-chim-pai-sweet-chilli-sauce","status":"publish","type":"post","link":"https:\/\/blog.pajh.org\/recipes\/2018\/08\/24\/nam-chim-pai-sweet-chilli-sauce\/","title":{"rendered":"Nam Chim Pai (sweet chilli sauce)"},"content":{"rendered":"<h3>A twist on a classic dipping sauce<\/h3>\n<p>Traditionally I&#8217;m informed the recipe calls for Serrano chillies, and rice wine vinegar.I find that throwing a scotch bonnet or two and some birds eyes in, and replacing the rice wine vinegar with apple cider vinegar spices up the sauce and adds a sweeter tang.<\/p>\n<h4>Ingredients<\/h4>\n<ul>\n<li>2 medium scotch bonnets<\/li>\n<li>7 Serrano chillies<\/li>\n<li>8 red birds eye&#8217;s<\/li>\n<li>2 large cloves of garlic<\/li>\n<li>150ml apple cider vinegar<\/li>\n<li>300ml water<\/li>\n<li>1 tsp salt<\/li>\n<li>4 tbsp sugar(add more if necessary,to taste)<\/li>\n<li>juice of quarter of a medium lime<\/li>\n<li>2 tbsp cornflour mixed into a paste with a little water<\/li>\n<\/ul>\n<h4>Method<\/h4>\n<ol>\n<li>Put a side plate in the fridge for later<\/li>\n<li>Finely chop the chillies and garlic,and place in a heavy bottomed pan.<\/li>\n<li>Add the water, vinegar, salt, juice and sugar and bring to a rolling boil for around 7 minutes to soften the chilli skin and garlic. It will be quite potent,and you may need a window open.<\/li>\n<li>Reduce the heat to a simmer. Slowly add the cornflour a little at a time,while stirring well to thicken the mixture<\/li>\n<li>Do a drop test on a cold plate to check the consistency, it should slowly run, and be syrupy.<\/li>\n<li>This should make around 3 jars of sauce<\/li>\n<\/ol>\n<p>This sauce can be used as the perfect dip for prawn crackers, or added to stir-frys as a
