Excellent accompaniment to meats, or to place at the side of a cheeseboard.<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1.4kg redcurrants, (fresh)<\/li>\n<li>2 good sized sprigs of fresh rosemary nicked from Alex&amp; Suzi&#8217;s garden<\/li>\n<li>1.4kg granulated sugar<\/li>\n<li>Knob of butter<\/li>\n<li>1tbsp cornflour dissolved in a little water.<\/li>\n<li>Shot of kirsch, or preferably Jim Beam&#8217;s Red Stag. (any dark fruit liqueur should do)<\/li>\n<\/ul>\n<p>Method:<\/p>\n<ol>\n<li>Measure the ingredients into a heavy bottomed pan.<\/li>\n<li>Heat gently for 10 minutes, then bring to a rolling boil.<\/li>\n<li>Continue to boil for 7-8 minutes.<\/li>\n<li>Strain the liquid from the berry pulp and herb debris.<\/li>\n<li>Pour back into the pan and reboil.<\/li>\n<li>Add the cornflour mix a little at a time, until the mixture thickens.<\/li>\n<li>Pour into prepared, sterilized jam jars.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Sweet and sharp, with a hint of rosemary.
