{"id":70,"date":"2018-08-24T00:11:24","date_gmt":"2018-08-24T00:11:24","guid":{"rendered":"http:\/\/blog.pajh.org\/recipes\/?p=70"},"modified":"2018-08-24T00:11:25","modified_gmt":"2018-08-24T00:11:25","slug":"maple-curd","status":"publish","type":"post","link":"https:\/\/blog.pajh.org\/recipes\/2018\/08\/24\/maple-curd\/","title":{"rendered":"Maple Curd"},"content":{"rendered":"<p>Versatile mapley goodness, can be used in tarts, pastries, pies etc.<\/p>\n<p>Ingredients: (makes enough for 2doz tartlets)<\/p>\n<ul>\n<li>3\/4 cup \/3oz brown sugar (the darker the better!)<\/li>\n<li>1\/4 cup\/ 3oz maple syrup<\/li>\n<li>1 tbsp butter<\/li>\n<li>1\/8th tsp\/a good pinch of salt<\/li>\n<li>1 large egg, lightly beaten<\/li>\n<li>3\/4 cup (good handful,around 4oz)chopped, lightly roasted or toasted pecan nuts (optional)<\/li>\n<\/ul>\n<p>Method<\/p>\n<ol>\n<li>Use a heavy bottomed saucepan to melt butter and sugars together at a medium heat.<\/li>\n<li>Add the other ingredients.Whisk well, to avoid clumping and sticking to the pan. Continue to stir while bringing to a steady simmer for 7-8minutes.<\/li>\n<li>The mixture is ready to use.<\/li>\n<li>If making tartlets, pour into pastry cases, top with pecan nuts, and bake at 180*C
