They&#8217;ll work fine under the grill.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">You gonnae need:<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>four-ish chicken breast fillets<\/li><li>a couple of bell peppers (mix up the colours!)<\/li><li>some other veg if you like, maybe red onions<\/li><li>skewers! Don&#8217;t forget these.<\/li><\/ul>\n\n\n\n<p>For the marinade:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>curry powder<\/li><li>Bacardi coconut rum<\/li><li>(optional) chilli flakes and\/or hot sauce<\/li><li>sesame oil<\/li><li>brown sugar<\/li><li>salt<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">You gonnae dae:<\/h2>\n\n\n\n<p>In a largeish bowl, mix two good heaped tablespoons of curry powder with a shot or two of coconut Barcardi. Don&#8217;t overdo the rum&#8212;you want the coconut flavour to come through, but you don&#8217;t want the marinade to be too wet. Mix it up thoroughly. Add a dash of sesame oil to the marinade, and a pinch of sugar and salt. Add a little more chilli if you want it hotter. Make sure it&#8217;s mixed up all smooth.<\/p>\n\n\n\n<p>Dice the chicken into cubes about 2cm to a side. Dump all the cubes into the bowl with the marinade and mix it all up with your hands, making sure the chicken is coated on all sides. Set it aside to marinate: the longer the better, but an hour will do. If you&#8217;re leaving it overnight, cover it and put it in the fridge.<\/p>\n\n\n\n<p>Dice up the peppers into roughly even-sized chunks that more or less match the size of the chicken pieces. Toss them in a bowl with a splash of soy sauce and a dash of Maggi. Microwave them until they&#8217;ve started to soften: give them five minutes, then give them a stir and see if they need another five. When they&#8217;re done, you&#8217;ll have to leave them alone for a few minutes before you can handle them.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Showtime<\/h2>\n\n\n\n<p>Thread chicken and peppers onto your skewers, alternating between meat and veg. Rest them onna plate to drip dry. Don&#8217;t throw away any leftover marinade. You can baste it over the kebabs while they&#8217;re cooking. Bear in mind it&#8217;s had raw chicken in it though, so don&#8217;t use it for anything else, no matter how delicious it smells.<\/p>\n\n\n\n<p>Grill &#8217;em up.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Good for barbecues!
