Doughnuts

- 1/2oz Fresh yeast
- 1/2tsp Sugar
- 3-4floz warmed milk
- 8oz Plain flour
- 1/2tsp salt
- 1oz Margerine
- 1 egg, beaten
- 3-4oz of Caster sugar
- Ground cinnamon

- Cream together the yeast and sugar in a basin, stir in most of the warmed milk and mix well to dissolve the yeast.
- Rub the margarine into the flour with the salt.
- Make a well in the centre of the dry mix, and add the yeast mixture and the beaten egg.Mix into dough, if needed add the rest of the milk.
- Knead well.
- Put to rise.
- Knead well.
- Rollout and cut into 3inch rounds, and cut out the centres. Leave to rise again
- Cook in hot oil for around 3 minutes. Lift out and drain on kitchen paper
- Toss in caster sugar and cinnamon mix.
