S(qu)kirlie(y?)

From a traditional Scottish recipe.

Ingredients:

  • 50g butter (or ideally, half and half butter and dripping)
  • 1 medium onion, very finely chopped.
  • 175g oatmeal (not oat bran!!!)
  • Salt and pepper to taste, and any other herb you find lying around. And garlic.

Method:

  1. Melt the butter over a medium heat, and then gently simmer the onions in this until they soften, and turn slightly golden.
  2. Reduce the heat , and add the other ingredients.
  3. Gently heat, stirring occasionally, for 15-20minutes until the oat has softened, and turned golden brown.
