Bramble Jelly
Ingredients:
- 1.5kg brambles
- 1kg sugar
- knob of butter
- 1 packet of Silverspoon pectin
Method:
- Throw the berries, sugar and butter into a heavy bottomed pan (probably the hugest pan you can find!)
- Gently heat for around 25-30 minutes, until the berries have softened, then whack up the heat and boil the fuck out of it! This will result in a dark, furiously bubbling pan of molten hot deliciousness. It will spit. Beware!
- Keep on a rolling boil for 7 minutes. Then lower the heat until it simmers. Add the pectin a little at a time and mix well. Continue to simmer for 4 minutes.
- Strain the mixture though a sieve to remove the hulls and seeds. Pour into prepared, sterilized jars, and pop the top onto form the vacuum required to preserve the jelly.
- You will almost halve the amount of jam. This will probably fill two 1lb, standard jars.
Variations:
Leave the seeds in, some people like the texture, and there will be a higher yield of jam.
Add thyme to the pan, or another herb of your choice.
