Lupe Pintos’ Famous Chili Con Carne!

Ingredients:

  • 500g beef chunks or steak mince
  • 1 chorizo sausage. Diced.
  • 2 medium onions, chopped.
  • 1 clove of minced garlic
  • 200g tin of red peppers, pureed
  • 400gtin chopped tomatoes
  • 1/2tsp ground cumin
  • 1/2 tsp oregano
  • 4 chipotle chilis in adobo sauce, chopped
  • 500g black beans
  • salt and pepper to taste
  • garnish of sour cream and chopped spring onions.

Method:

  1. Saute the onions and garlic for 5 minutes
  2. Add the beef and chorizo and brown well on a high heat for 15 miinutes.
  3. Add the tomatoes, peppers , spices and chipotles. Reduce the heat and simmer with the lid on for 1hr and 20minutes, or until beef is tender, stirring occasionally and adding water if necessary.
  4. Add the black beans and simmer for 15 miutes.
  5. Season to taste and serve with rice.
  6. Garnish with a dollop sour cream and chopped spring onions.

Tips:

Lots of beer and hot sauce to accompany.

Dunna use cheap, shitty supermarket chorizo! It ruins the recipe.
