The Good Cheese Scone Recipe
A scrummy savoury delight, hot or cold. For best results store in a dry, cool place locked away from people who like scones.
Ingredients:
- 6oz plain flour
- 6oz self-raising flour
- 3oz vegetable shortening/Trex
- 1oz butter
- 6oz grated cheese (preferably cheddar or red Leicester) plus extra for topping
- 8floz semi-skimmed milk, plus extra to wash.
- pinch of salt
- pinch of pepper
- 3tsp mustard powder
- 1.5 tsps baking powder
Method:
- Preheat the oven to 220* C.
- Weigh our dry ingredients into a large bowl.
- Add the cheese and mix in.
- Scant the milk a splash at a time mixing to form a pastry-like dough.
- Roll out onto a floured surface around 1 ½ inch thick .
- Cut into 2 ¼ inch rounds.
- Place on a baking tray lined with grease-proof paper.
- Wash the scones with the remaining milk. Sprinkle the remaining cheese, with a little black pepper on the top
- Bake middle oven for 12 minutes until golden brown
- Place on a wire rack to cool.
