The Good Cheese Scone Recipe

A scrummy savoury delight, hot or cold. For best results store in a dry, cool place locked away from people who like scones.

Ingredients:

  • 6oz plain flour
  • 6oz self-raising flour
  • 3oz vegetable shortening/Trex
  • 1oz butter
  • 6oz grated cheese (preferably cheddar or red Leicester) plus extra for topping
  • 8floz semi-skimmed milk, plus extra to wash.
  • pinch of salt
  • pinch of pepper
  • 3tsp mustard powder
  • 1.5 tsps baking powder

Method:

  1. Preheat the oven to 220* C.
  2. Weigh our dry ingredients into a large bowl.
  3. Add the cheese and mix in.
  4. Scant the milk a splash at a time mixing to form a pastry-like dough.
  5. Roll out onto a floured surface around 1 ½ inch thick .
  6. Cut into 2 ¼ inch rounds.
  7. Place on a baking tray lined with grease-proof paper.
  8. Wash the scones with the remaining milk. Sprinkle the remaining cheese, with a little black pepper on the top
  9. Bake middle oven for 12 minutes until golden brown
  10. Place on a wire rack to cool.
