Chocolate Baileys poke cake with baileys filling, baileys topping, and baileys
You gonnae need:
- 2cp plain flour (260g)
- 2cp sugar (414g)
- 3/4cp cocoa powder (85g)
- 2tsp baking soda
- 1tsp salt
- 2 lge eggs
- 180ml milk
- 240ml veg oil
- 240ml Baileys
- 1tsp vanilla
- 180ml boiling water
- 240ml condensed milk
- 127g choc chips
For the topping:
- 480ml whipping cream
- 86g powdered sugar
- 29g cocoa powder
- 2tbsp baileys (optional but why wouldn’t you)
- 1/2tsp vanilla extract
You gonnae dae:
- Grease a 9″x13″ cake pan, preheat oven to 148°C.
- Add all dry ingredients into a large bowl and combine.
- Add eggs, milk, veg oil, half the baileys, and vanilla into the dry ingredients. Mix well.
- Slowly add the water, mixing well.
- Pour into the cake pan and bake for 40–45min, or until a toothpick comes out clean.
- Remove the cake from the oven and POKE POKEY POKE holes all over it.
- While the cake is still warm, add the choc chips to a medium sized bowl.
- Add the condensed milk and remaining baileys into a measuring cup. Microwave it until it boils, then pour over the choc chips.
- Whisk the chocolate smooth, then pour it over the cake, spreading it into the holes.
- Cake goes in fridge to cool and soak.
- Inna large bowl, add the ingredients for the topping. Whip until you have stiff peaks.
- Whipped cream goes over the cake. Further choc chips go over the cream. Chocolate sauce goes over that (optional).
- Drink any remaining baileys.
